Tempus Two Varietal Range Cabernet Merlot has a nose of berry fruits, cassis, hints of chocolate and cigar -box characters. The palate is well -balanced and full -bodied exhibiting rich berry fruit and chocolate. The flavours linger, complementing the fine tannins, and adding to the complexity of the overall smoothness of the wine.

OVERVIEW

The Cabernet Sauvignon for this wine is sourced from the King Valley, renowned for producing soft yet flavoursome red wines excellent for blending. Both the Merlot and the Cabernet Sauvignon reached perfect physiological ripeness when harvested. The fruit was crushed, cooled and given 48-hours of cold-soaking prior to warm fermentation, pressing and blending. This rich and flavoursome blend was matured in both French and American barriques for ten months to capture and enhance the complexities of these two varieties.
